Ernest Mallais started dancing in 1994 in Fredericton, New Brunswick, under the instruction of his brother, Donald Mallais, an established professional in ballroom dancing. Ernest was quick to pick up the similar dynamics found in ballroom dancing and started teaching alongside his brother in less than one year.

Through 1996 to 2007, Ernest worked with several different dance studios teaching hundreds of students, training other instructors, competing successfully both professionally and with his students at the amateur level. From 1996 to 2000, he taught a student who was completely blind (Dorothy Madgett) and competed with her at several competitions with no handicap, winning nearly all entrees. In 2000, Ernest, with one of his students (Brenda Morgan) won 1st Place in the American Style Ballroom Championship Scholarship Division at the Can-Am Dancesport Gala. He also participated in the Dancing with the Stars Tour in 2006 at the Air Canada Centre in Toronto placing 2nd, and won 1st place in 2007 at Copps Coliseum in Hamilton. While working at Arthur Murray, Ernest won several top teacher awards as well as business awards for studio growth every year between 1996 and 2007.

After a short break from dancing, Ernest decided to open his own dance studio, Groove Studios in Guelph, Ontario in May 2009. His philosophy in ballroom dance instruction is to give students the physical benefits, personal benefits and confidence that dancing offers, while helping individuals attain their desired level of dancing. He teaches all ballroom and latin dance styles at social and competitive levels.
